Carthage Locker Plant Serves County's Processing and Retail Meat Needs


The Carthage Locker Plant has long been the first name in serving local meat processing needs. Few may realize, however, that the business is also a retail market for some of the finest, competitively priced cuts of meat and fresh-frozen vegetables available.

Offering custom slaughtering, and a wholesale and retail meat market, the Carthage Locker Plant is fully state inspected. It is the only one of few in the state. It turns out that the Carthage Locker Plant's 25-year commitment to quality made it one of the few meat plants to survive the state's stringent inspection laws.

"Hundreds of meat processing plants were weeded out by the state inspection policies," said owner Pam Kneipp.

Current owners Bill and Pam Kneipp bought the Carthage Locker Plant two years ago. The original owner was Albert Born and the original location was behind Beall's Department Store in its early years. The plant moved to its current location at 921 East 59 Loop some 20 years ago.

With a continued commitment to quality, the Kneipp's have operated the plant with high standards of customer service. There is no need for the buyer to beware here.

"When it says ground chuck, it's pure chuck," said Pam. "There are no additives, colorings or animal organs."

Processing services available include beef, pork, goats, sheep, deer, buffaloes, elk, emu and ostrich. The plant also offers rental locker space.

On the retail side, meat is set out fresh daily and can be cut to order. There is always plenty of fresh frozen vegetables and seafood as well.

"We make our own smoked sausage, hot links, deer sausage and summer sausage," added plant employee Tammie McNair.Pam concluded, "We also cure our own hams and bacon."
